Uncorked guests tasted a 1998 Noble Late Harvest at Klein Constantia yesterday. A rare treat!

A Noble Late Harvest is produced through a distinct fermentation process, initially caused by a combination of specific weather (drier conditions following wetter) leading to a beneficial fungus infection called Botrytis.

Also known as "noble rot", the fungus removes water from the grapes, leaving behind a higher percent of solids, such as sugars, fruit acids and minerals. This results in a more intense, concentrated final product. The wine is often said to have an aroma of honeysuckle and a bitter finish on the palate.

Once again, proof that Constantia wines are among the best in South Africa:

At the Old Mutual Trophy Wine Show, Buitenverwachting won the trophy for Best Dessert Wine for the ‘1769’ 2014, as well as the Riedel Trophy for Best Bordeaux-Style Red Blend for their Meifort 2014.

Best Sparkling Wine went to Constantia Uitsig for their Méthode Cap Classique Brut 2013.
