Have you ever fallen for a city… bite by bite?

Because that’s exactly what happened to us in Bilbao. We knew there was something special here, something you don’t just see, you taste.

For the past months, we’ve been exploring, testing, getting lost (and found) in the Market and the Old Town… shaping a tour that feels like Bilbao really does: honest, vibrant, and full of stories.

And now it’s finally happening.

Traditionally, they were there to catch your eye. A visual menu. A way to draw you in. But as locals we don’t eat everything we see displayed.

Step into a true Basque tradition at a Sagardotegia— a classic ciderhouse🍏

Stone floors underfoot, long wooden tables, the smell of smoke and grilled txuleta (steak) hanging in the air.

Cider barrels lining the walls, glasses clink. When you hear the shout “Txotx!” (pronounced: chotch), everyone runs to the kupela barrels for cold, cloudy cider served at a height. The cider is sharp, fresh, and tangy. Not Sweet. This is a ritual.

➡️ Cider season runs from January to April, when the year’s cider is ready—just as it’s been done for centuries. Earliest records of Basque ciderhouses date back to 1014, and standing here, glass in hand, you’ll feel its communal hum, like nothing has changed at all. It's an experience worth living!
