Lasagna is always the star of the show, but every star needs a great supporting cast! 🌟🍅
When guiding guests through the local osterias and wine bars in Italy, we always talk about the golden rule of Italian dining: balance. Because traditional pasta al forno is so rich and heavy with ragù and cheese, you want sides that cut through that richness rather than weigh you down (so you can probably skip the heavy garlic bread!).
Here is how to build the perfect authentic pairing for your next lasagna night:
🥗 A Bright, Peppery Salad
Keep it simple. A handful of fresh arugula (rocket) tossed in good extra virgin olive oil, a squeeze of fresh lemon juice, and a pinch of sea salt. The acidity and pepperiness perfectly reset your palate after a bite of creamy béchamel.
🥦 Garlicky Greens
Sautéed spinach or roasted broccolini with a dash of chili flakes and garlic. The slight bitterness of the greens balances the sweetness of the tomato sauce.
🍷 The Perfect Pour
You need a red wine with high acidity to stand up to the rich meat and cheese. A Chianti Classico is a great choice, but if you want to drink like we do on the evening routes in Venice, grab a bottle of Valpolicella. It’s bright, cherry-forward, and absolute perfection with baked pasta.
