On Monday’s in New Orleans the citizen were all tired from their weekend of mass at the church, balls, bars, theaters, dances, marches, parades or even black gatherings in Congo Square or Treme! With all of their good weekend clothes being used black women “washer woman” washed and ironed lol of the clothes of the day while also cooking! The meal of choice was Red Beans and Rice and unlike their Caribbean Cousins they let them beans simmer and get juicy in their own sauces and spices and would serve them at the end of the day when finishing washing the clothes! honor these women who we come from who created a tradition we continue into this day RED BEANS and RICE MONDAYS a New Orleans Tradition!
