Soufflé pancakes, made fresh in front of you. 🥞

At JW Café, JW Marriott Hotel Hanoi, the Soufflé Pancake Station is the one to go to. You watch the pancakes rise, and they reach your plate still warm and soft.

The person behind them is Chef Jason Licker, the new Executive Pastry Chef.

And the pancakes are only one part of the breakfast buffet. There are Vietnamese specialties, Japanese, Korean and Chinese dishes, cheeses, cold cuts and all the usual favorites.

Rihla means “journey” in Arabic, and this café in Long Biên feels like a small one.

We found it down a quiet alley off Ngọc Thụy, a little away from the usual Old Quarter route. That’s part of the fun. You step inside and the city slows down.

Ask any Hanoian what pho should be, and you’ll hear the same thing: clear broth, thin noodles, nothing fancy. This bowl breaks all of that, and it’s worth your lunch break.

It’s called Phở Hấp. The noodle isn’t cut into strips or dipped in hot broth. It’s a wide, whole sheet, steamed until soft and silky, a bit like banh cuon. On top goes beef stir-fried over high heat with garlic, then fried shallots, roasted peanuts and fresh herbs. The sauce is made from five or six kinds of soy sauce.

No broth, and still pho.

💍The Ho Guom ring by 𝗛𝗘𝗟𝗜𝗢𝗦 is handmade in silver by Vietnamese artisans. Look closely and you’ll find the ripple of Hoan Kiem Lake, layered roof tiles like the old streets from above, and a few curves that hint at a dragon.

The catch: you can’t order it online, and you won’t find it in any other city. It exists only at their shop in Hanoi.
