Ottawa Day 3, we attended the C’est Bon Cookery School to learn about using some of the Canadian foraged herbs & spices for cooking. Spruce tips, and White Birch Sap to name a few of the ingredients used.

3 of our group under the supervision and direction of Chef Georges, cooked Artichoke, Asparagus & Pepper Risotto, along side cured salmon.

Maple Crème Brûlée to finish. This was an example of many things you can do when staying in or around Ottawa.

This Sunday I’ll be heading to Heathrow, ready to fly to Canada on Monday for a very special familiarisation trip with Canadian Affair.
