โ๏ธ This week's heatwave reminded me of something from my childhood in Bulgaria.
When temperatures climbed into the 30s and everyone was looking for a way to cool down, one dish would appear on almost every table: Tarator.
๐ฅ Made with yoghurt, cucumber, garlic, dill, and a little olive oil, it's a cold soup that's refreshing, healthy, and perfect for hot summer days.
Many people compare it to Spanish gazpacho, but instead of tomatoes, Tarator is based on yoghurt and cucumber.
Having lived in the UK for many years now, it's one of those simple Bulgarian traditions I still enjoy whenever the weather turns hot.
It's amazing how food can instantly transport you back to a place and a memory.
