Mid-June in South Tyrol means one thing: cows are making their way to the alpine pastures.

Up in the high meadows, where the air is fresh and wild herbs grow in abundance, the cows roam freely. The altitude, the vegetation, and the pace of nature all contribute to their well-being, and you can taste the difference in the milk. 💙

As you hike through the mountains, you might come across these peaceful animals or hear the soft sound of their bells echoing through the valley. It’s a clear sign that summer has arrived in South Tyrol.

Dumplings are a true South Tyrolean icon. 😋 Born from a humble, no-waste recipe in the heart of mountain farms and alpine valleys, they represent a cuisine made of few ingredients, yet bursting with flavor.

With Speck and broth, they’ve become a timeless classic: soft, rich, and hearty.

But there’s no single way to make them. Some prefer them with cheese or spinach, others go for pressed or liver variations. Then there are the more creative takes: beetroot, mushrooms, fresh herbs… even sweet ones, with apricots and buttery breadcrumbs.
