Last week a group of Avanti staff spent a morning in Lecce, Italy, on a Market and Cooking Class tour as part of an educational trip through Puglia. The tour began with a short walk to meet a local chef, who led the group through a neighborhood market stocked with fresh meat, cheese, and seasonal produce. Back in the kitchen, the team rolled orecchiette, baked focaccia, filled pork neck rolls with cheese, and finished with tiramisu, while the chef added her own chicken cacciatore to the table. The morning wrapped up with everyone sitting down to the meal they made, paired with plenty of w**e and coffee to finish.
