🍋Lemon Posset Recipe
Serves 8 espresso cups)
Ingredients:
• 2 lemons (zest + juice)
• 500ml thickened cream
• ⅔ cup sugar
Method:
- Add cream + sugar to a saucepan over low heat. Stir until sugar dissolves.
- Increase to medium heat and bring to a gentle boil. Cook 8 minutes, stirring minimally (don’t let it boil over).
- Zest and juice the lemons. Mix together.
- While cream is warm, stir in 6 tbsp lemon juice mixture. Rest 10 minutes.
- Pour into a jug, then into espresso cups or small jars (fill ~â…”).
Strain zest if preferred.
- Chill 1 hour until set.
- Serve plain or topped with fruit.
